Menu Plan Monday - August 19-25


Welcome to my first post for Organizing Junkie's Menu Plan Monday! Now, I realize that today is Tuesday, but I just returned from being out of town, so this post is a day late. In the future - look for it on Mondays!

I like to come up with a "theme" for each night (thanks to Simple Mom) and then pick out what we're eating based on the theme. This greatly simplifies my menu planning. See this post on menu planning for a few more tips.

Here's my plan for the week:

Tuesday: Something grilled night - Grilled chicken & spinach salad (with spinach, grilled
(chicken, tomatoes, carrots, and egg)

Wednesday: Breakfast for dinner - Grits, bacon, and muffins

Thursday: Homemade pizza night!

Friday: Asian night - Hibachi shrimp & fried rice (This will be new for us - we're not so sure how it will turn out, but we've been wanting to try it.)

Saturday: Leftovers for lunch, out with friends for dinner

Sunday: Italian night - Spaghetti & salad

Monday: Mexican night - Beef enchiladas

We are blessed that where my husband works, lunch is provided usually several days a week. This gives us enough leftovers for lunch the other days, or I can just eat something simple that we have on hand. We're new to menu planning and are still making adjustments, but we're going to try the Tuesday-Monday plan for a while to see how it works.

Thanks for commenting Rebekah! I'm glad to see we're not the only ones in this position!

Unfortunately, no Aldi near me. :( But I've gotten several tips from other frugal shoppers after posting this at Meal Plan Monday, so I'm definitely not giving up! Next week we're cutting back on meat, cutting out everything that isn't specifically part of a meal (including fruits), and we're trying again.

I look forward to reading more of your blog!

Also, here is a fried rice recipe I found on last weeks MPM!!!
Fried Rice
25 min | 5 min prep


This is great as a main dish or accompanying your favorite Oriental meal.
•1 tablespoon butter or margarine
•2 eggs, beaten
•1 tablespoon butter or margarine
•1/4 cup chopped onion
•1/4 cup chopped green pepper(optional)
•2 cups rice, prepared and cooled
•1/2 cup cooked pork (optional) or cooked shrimp (optional) or cooked chicken (optional)
•1/4 cup soy sauce
•1/2 cup cooked peas (optional)

Directions
1.Melt 1 tablespoon butter in skillet or wok.
2.Scramble eggs in butter, breaking up the cooked eggs into small pieces.
3.Set aside.
4.Melt 1 tablespoon butter in skillet or wok.
5.Saute onions and/or green peppers in butter for 3 minutes.
6.Combine eggs, onions, rice, and meat.
7.Stir in soy sauce until color of rice is uniform.
8.Stir in peas.
9.Heat only until warm.
